Subway Sandwiches

                               
                             
       Eat. Sleep. Study. Repeat.
 This phrase is reflecting my life. You know, after all its not easy being a pharmacy student and "rattafying" all the odd drugs's names and memorizing the typical chemical structures (by typical I mean like an Indian drama serial, haha). But whenever I get freaked out of making time tables (which I hardly follow) then I have to find some way out.

Here is a very easy, homemade and mouth watering recipe of the "Subway Sandwiches" which I strongly recommend you guys to try on this upcoming weekend.

This recipe includes 3 french breads(12 inches each). Serves for 6 persons.

Ingredients:
  For filling:
Chicken 1/4 kg
Cabbage 1/2
Capsicum 1
Carrot 1
Onion(sliced) 1
Tomatoes (sliced) 1
Cucumbers 1
Olives  5
Mushrooms around 5
Lettuce (I was running out of it but you can add)
Ketchup
Mayonnaise

 Cheese:
Adam's Cheddar Cheese
Sliced Cheese (Happy Cow or any)

 Chicken:
Chicken 1/4 kg (boiled and shredded)
Soy Sauce 2 tbsps
Vinegar 2- 1/2 tbsp
Chinese salt 1 tsp
Shan Tandoori masala 1tbsp
Capsicum 1
Carrots 1
Cauli flower 1/2


Procedure:

Boil the chicken and shred it.

Take some oil in fry pan and add the shredded chicken. Then one by one add the mentioned quantities of vinegar, soy sauce, tandoori masala and the vegetables. Mix well. You can add mushrooms and olives now or add later while filling the sandwiches.

Filling:

I took 1 plain french and 2 ginger french breads. (Available at Shazz Super Market, Stadium Rd., Karachi)                        




                
       

    
               
Shred the cheddar cheese.


Sliced mushrooms & olives

Fill the bread with chicken along with mushrooms and olives and the other vegetables(onions, tomatoes, lettuce). Spread the cheese.               
 Brush some butter onto the top.
   
Bake in oven for around 10 minutes at 120°C till it gets a little crispy.

Fried Chicken

   Assalamualikum.
Hope y'all are having a great Ramadan Kareem and enjoying the blessings in this blissful month. Today here I am with a very easy recipe for your aftaar dastarkhuwans.




 Ingredients:

 FOR MARINATION:

1.5 kg chicken          

1.5 tsp garlic paste
3  tbsp chilli sauce
2  tbsp ketchup
1.5  tsp salt
1 tsp black pepper (grounded)
1 tsp white pepper powder

 Marinate the chicken and leave it for 4-5 hours.

 
FOR BATTER:


1/2 cup Maida+1 tsp baking powder. Sift them in a bowl.
2tbsp cornflour
1 tsp salt
1/2 tsp (a little more than half) Cayenne pepper {Laal Mirch}
1/2 tsp (a little more than half) white pepper powder
Chilled milk

Mix the dry ingredients and add chilled milk, making a thin batter.


FOR COATING:

1 cup maida+1.5 tsp baking powder.


Procedure:

Dip the marinated chicken pieces into the batter completely. Then roll them in the coating (maida+baking powder). Now deep fry.
You can double coat the chicken pieces by again rolling each piece before frying.

     
Fry for around 20 minutes or until brown in color. Make sure not to touch the frying chicken too often.

P.S Sorry for not putting up the pictures of batter as I was running out of time and had to fry it very quickly for aftaar.

"Vanilla Cupcakes" step by step picture recipe

Assalamualikum,
 Ramadan mubarak to all.
Here's a step by step picture recipe for vanilla cupcakes which I tried a while ago and decorated them with homemade buttercream icing.
Here you go!

Ingredients:










Procedure:

  1. Preheat the oven at 180° C.



2. Beat butter, sugar and extract for about 3-4 mins.


 

3. Beat in eggs one at a time until combined.


     
4.  Stir in flour and milk alternatively.


          

5. Pour in cupcakes liner.

        
And bake until done.


   
 Here you go.

  





NOW TIME TO DECORATE THEM!!

I frosted the cupcakes using Betty Crocker's vanilla frosting.

And then prepared "ButterCream Icing" for further colorful decorations.

Recipe for "ButterCream Icing":

Icing sugar 2 to 2  1/2 cups
Butter 100 gms
Vanilla extract 1tsp


Gradually add sugar, one cup at a time beating well on medium speed. When all sugar has been mixed in, icing will appear dry. Add in a tsp of milk if icing is too rough. Now beat on low speed until light and fluffy.

Fill it in the piping bag, fit in the desired decorating tip and start decorating!
