Vanilla Cupcakes

Hope all of you are enjoying the blessed month of Ramadan and these beautiful rainy days.
Today my first post is about the "vanilla cupcakes" I baked few days ago for aftaar. I was asked for the recipe and I thought it would be great to share with you.





Ingredients: [makes 10 (I took photos of just 7)]
1/2 cup unsalted butter(softened)
1/2 cup superfine sugar
2 eggs(lightly beaten)
1 cup self-rising flour
1 tbsp milk
1/2 teaspoon vanilla essence
1/2 teaspoon baking powder
Cupcakes paper cup


Frosting (for decoration)
Betty Crocker's fluffy white frosting (you can get it from any good grocery store. I got mines from Imtiaz) or you can prepare your own icing.
Icing colors- red and orange (or any of your choice)

Wilton's tip # 103

Chocolate and white chips(optional)




Procedure:
1) Preheat the oven to 350°F/ 180°C. Put 12 paper cups in a muffin pan.
2) Put the butter and superfine sugar into a bowl and beat together until light and fluffy. Gradually beat in the eggs. Sift in the flour using a metal spoon, fold into the batter with the milk, essence and baking powder. Spoon the batter into the paper liners.
3) Bake the cupcakes in the preheated oven for 20 mins or until golden brown and firm to the touch. Transfer to a white rack and let cool.
4) Now decorate the cupcakes.
5) For decoration: You can easily pipe exciting two-tone decorations just by adding a different color inside the bag before you put in your icing.
Apply one or more stripes of icing color with a decorating brush, then fill the bag with white icing/frosting. Place the decorating tip(#103). As the icing is squeezed past the color, decoration will come out striped. I used red and orange colors. And that's how my cupcakes have pink and yellowish orange stripes.



Bake your cupcakes for aftaar and enjoy! :)
